The Junior Sommelier supports the daily operational needs of the wine program across CCR and CCML. This role is primarily focused on supporting wine service, as well as cellar organization, proper binning and storage, maintaining inventory accuracy, and contributing to team education at pre-shift lineups.
The Junior Sommelier works closely with the Sommelier team, Wine Director (WD), and Assistant Beverage Director (ABD) to ensure the cellar operates cleanly and efficiently, and that all wines are handled with care and precision.
ESSENTIAL FUNCTIONS OF THE POSITION INCLUDE, BUT ARE NOT LIMITED TO:
Assist and/ or complete additional tasks as assigned
Assist with all aspects of wine service (bottle retrieval, decanting, glassware) as directed during service.
Wine List editing, printing, and maintenance during side work.
Uphold service standards for wine presentation, glassware, and temperature.
Work closely with the sommelier team to understand the event wine package, guest profile, and service flow in advance.
Manage guest-supplied wine (corkage) during events with professionalism, verifying bottle condition, and executing service correctly.
Compile post-event reports on wine consumption, leftover inventory, and any guest/team feedback for review
Separate vintages/labels correctly and verify bottle condition upon receipt.
Ensure wines are binned within a reasonable timeframe following delivery.
Flag any bottles with quality concerns (cork condition, seepage, label damage) to the WD and ABD immediately.
Keep all bin locations clean, labeled, and organized.
Monitor temperature and humidity conditions and report any irregularities.
Ensure cellar pathways remain clear and bottles are stored safely.
Assist with receiving deliveries as directed by the WD.
Verify physical delivery against invoices when asked, and alert the WD and ABD of any discrepancies before transport.
Follow all special handling instructions (vintage separation, fragile bottles, large formats, etc.).
Assist with depletion tracking.
Develop familiarity with BTG pars and cellar organization to assist with restocking and reordering needs.
Communicate low stock levels or notable depletions proactively to reorder before 86’ing.
Assist with inventory counts once a month during the day.
Lead or co-lead brief wine education segments at pre-shift lineups as scheduled by the WD.
Actively pursue continued wine education through reading, tastings, and engagement with distributor materials.
TRAINING REQUIREMENTS:
EDUCATION/WORKING KNOWLEDGE:
Must have a minimum of two (2) years of direct work experience
Knowledge of drink recipes
Opening and closing duties
Sanitation and safety
